QUICK AND EASY FRIED CHICKEN
3-4 boneless, skinless chicken breasts
12 oz. can evaporated milk
1 cup oil
2 cups corn flakes, crushed
salt and pepper to taste
Slice chicken lengthwise to make approximately 3 strips for each breast. Place strips in a large bowl and cover with evaporated milk. Heat oil in a large skillet on high heat approximately 3 minutes until good and hot. Pour corn flakes on a plate, shake excess milk off chicken strips; coat completely in crumbs, place in heated oil. Cook chicken until golden brown on both sides. Turn only once. drain on paper towels. Salt and pepper to taste.
