ZUCCHINI PANCAKES
1 egg
1 cup shredded golden or green zucchini, unpeeled
1/2 cup finely chopped onion
1 tbsp. slivered red bell pepper
1 tbsp. dry bread crumbs
1/4 tsp. salt
Pinch oregano
Dash hot pepper sauce
1 tbsp. butter or vegetable oil
In bowl beat egg. Mix in zucchini, onion, red pepper, bread crumbs, salt, oregano and hot pepper sauce.
In large skillet melt butter or heat oil on medium-high. For each pancake, spoon in about 1/4 cup zucchini mixture and spread to about 1/4-inch thickness. Cook 3-4 minutes per side until golden. Serve immediately.
