ISO: Aji Sauce is unbelievable

I certainly will share the recipe if I can figure it out - or if others add to the knowledge.

I cannot describe the taste of this sauce.
It's offered with Peruvian bread when you order at Pollo Inka (On Euclid and I5 I believe - a great restaurant) in a squeeze bottle (like for ketchup) and I ALWAYS completely drain the bottle :O)

I like hot/spicey foods, grow my own chillies from Habaneros to Jalapenos +++, but this stuff is more like avocado than heat. It has a unique spicey/international taste that can't be described as hot (for me anyway) - but may be a bit spicey for some untrained tongues... but only a very few would claim that.

They sell it in large styrofoam containers, and it's expensive... but I drive 130 miles for it a few times each year, and wish I did it much more often. It's that good! I'm serious. You can use it in place of mayo on sandwiches, on salads, meats and chicken... and of course to slurp up with bread.

I'm telling you all - this stuff is about as good as it gets in my book. Lets figure this one out - we'll all enjoy it for a long, long time!
