Recipe: White Chocolate Berry Pie

WHITE CHOCOLATE BERRY PIE

1 1/2 cups graham cracker crumbs; or chocolate crumbs
1/4 cup soft margarine; melted
4 squares white chocolate
8 oz light cream cheese; softened
2 tbsp sugar
1/2 tsp almond extract
19 oz canned mixed berry pie filling, divided
1/2 cup whipping cream

Combine crumbs and margarine. Press evenly over bottom and sides of a 9-inch pie plate.

Bake at 375 degrees for 8 minutes. Cool.

Melt white chocolate over hot water.

Beat cream cheese, sugar and almond extract until smooth. Blend in chocolate. Fold 1 cup pie filling into chocolate mixture.

Beat whipping cream until stiff, fold into chocolate mixture. Spoon into crumb crust. Spoon remaining pie filling in center of pie.

Refrigerate at least 3 hours.
