Pumpkin Nut Snowballs (using ice cream)

Makes 9 snowballs
1 1/2 cup canned pumpkin pie mix
1/3 cup sugar
1 tsp vanilla
1 quart vanilla ice cream; softened
1 cup chopped pecans or walnuts
Stir pumpkin pie mix, sugar and vanilla into softened ice cream. Refreeze.
Shape into balls Freeze, then roll in chopped nuts. Place snowballs in square baking pan, cover with foil. Keep frozen until ready to serve.
To double recipe, use 1 full can (30 oz.) pumpkin pie mix, and double amounts of all other ingredients.
Note:
Ice cream will soften in package if placed in refrigerator for an hour. For quicker softening place ice cream in large bowl at room temperature. stir frequently, breaking up ice cream with wooden spoon or beater.
