Huachinango Veracruz (Baked Red Snapper, Veracruz style)

Serves 3.
1 1/2 pounds red snapper
1 medium onion -- diced
2/3 cup parsley -- minced
4 plum tomatoes -- diced
2 cloves garlic -- minced
3 tablespoons olive oil
1 lemon or lime
10 olives -- minced
1/4 cup capers
salt
pepper
Heat over to 375F.
In a large piece of aluminum foil or parchment paper, place the snapper. Pour the olive oil over the top & arrange other ingredients over the snapper except lemon or lime.
Wrap and bake 45 minutes. Let stand unopened 15 minutes.
Open & squeeze lemon or lime on top.
