Recipe: Creamy Shrimp with Fettuccine

CREAMY SHRIMP WITH FETTUCCINE

1 lb fettuccine
1 lb raw shrimp
1 oz butter
1 tbsp olive oil
6 spring onions, chopped
1 clove garlic, crushed
1 cup cream
2 tbsp fresh parsley, chopped

Cook the fettuccine in a large pan of boiling water until tender. Drain and return to pan; have the shrimp peeled and deveined. Heat the butter and oil in a frying pan, add the spring onion and garlic and stir over low heat for 1 min. add the shrimp and cook for 2-3 minutes. or until the flesh changes color. Remove the shrimp from the pan and set aside. Add the cream to the pan and bring to a slow boil. Reduce the heat and simmer until the sauce begins to thicken. Return the shrimp to the pan, add salt and pepper to taste, simmer for 1 min. add the shrimp and sauce to the warm fettuccine and toss gently. Serve sprinkled with chopped parsley.
