STREUSEL RHUBARB DESSERT SQUARES
Crust
1 cup flour
1/3 cup powdered sugar
1/3 cup butter
Filling
1-1/4 cups sugar
1/4 cup flour
1/2 tsp. salt
2 eggs, slightly beaten
3 cups sliced fresh or frozen rhubarb (do not thaw)
Topping
3/4 cup flour
1/2 cup sugar
1/4 tsp. cinnamon
1/3 cup butter
Heat oven to 350 F. In medium bowl, combine 1 cup flour and powdered sugar. Using pastry blender cut in 1/3 cup butter until crumbly. Press in bottom of ungreased 9-inch square pan. Bake 15 minutes.
In medium bowl, combine all filling ingredients; mix well. Pour over partially baked crust. In medium bowl, combine all topping ingredients except 1/3 cup butter. Using pastry blender cut in 1/3 cup butter until crumbly. Sprinkle over filling. Bake 45 to 55 minutes or until topping is light golden brown and rhubarb is tender.
