SCALLOPS AU GRATIN
1 lb scallops
1 cup chicken stock
1 1/2 cups sliced mushrooms
2 tbsp butter
2 cups mornay sauce...[below]
Cook scallops in chicken stock,3-5 minutes or until cooked through. Saute scallops and mushrooms in butter.
Place sauce mixture over and sprinkle with grated cheese. Place under heated broiler until cheese melts.
MORNAY SAUCE:
2 tbsp butter
2 tbsp flour
1/2 cup chicken stock
1/2 cup heavy cream
1/4 tsp salt
1/4 tsp pepper
1/4 cup grated parmesan cheese
In a saucepan, melt the butter, add the flour and stir into a paste. Add the chicken stock, cream and seasonings. Simmer while stirring, until thickened. Add cheese and simmer 2 more minutes.
