Recipe: Raspberry Applesauce

Raspberry Applesauce
6 apples (golden delicious, macintosh, pippin, granny smith) washed cored and sliced
2/3 cup raspberries, rinsed
1/3 cup frozen apple juice concentrate, thawed
1/2 tsp. ground cinnamon
garnish: plain low-fat yogurt
1. place the apples in a deep saucepan with the raspberries, juice, and cinnamon. bring to a boil, cover, reduce heat to medium-low, and simmer for 25 minutes, or until the apples are very soft.
2. remove from heat and put the mixture through a food mill or strainer to remove the peels easily. allow to cool, place in a covered container, and chill until ready to serve.
3. serve chilled with a dollop of yogurt.
Variation: frozen unsweetened raspberries can be substituted for the fresh raspberries.
apples can be peeled first, sprinkled with lemon juice to prevent browning, and cooked until soft without straining.
