Summer Fruit Slaw
Serves 12

6 cups coarsely, shredded red or green
cabbage
2 cups chopped fresh plums
2 cups chopped nectarines, peaches, papayas or mangos
1 cup raisins

In a large salad bowl, toss together the cabbage, plums, nectarines or other fruit and raisins.

Prepare Walnut Dressing; pour over salad and toss well to coat. Cover and chill or serve as is.

Walnut Dressing

1 cup vegetable oil
1/2 cup cider vinegar
2 tps brown sugar
1 cup finely chopped walnuts

In a shaker jar, combine oil, vinegar, sugar and walnuts. Cover and shake well to mix.
