Crunchy Apple Pie
Yield: one 9-inch pie
2 c chopped cooking apples
1/2 c firmly packed brown sugar
1/2 c granulated sugar
1/2 c all-purpose flour
1 egg yolk; beaten
1/2 tsp vanilla extract
1/2 tsp freshly squeezed lemon juice
1/2 c chopped pecans
1 egg white beaten until foamy
1 (9-inch) unbaked pie shell
Put chopped apples in a large bowl. Add sugar, flour, egg yolk, vanilla, lemon juice and pecans; mix well. Add egg white. Stir well and pour mixture into unbaked pie shell. Bake at 350 degrees for 30-45 minutes or until apples are tender and brown.
