MOLASSES SUGAR COOKIES
3/4 cup shortening
1 cup sugar (plus extra for rolling)
1/4 cup molasses
1 egg
2 cups flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1/4 teaspoon mace (optional)
1/2 teaspoon salt
Preheat oven to 375 degrees F and grease cookie sheets.
Cream together shortening and 1 cup sugar. Add molasses and egg. Add dry ingredients and mix well.
Roll dough into 1-inch balls and roll in sugar. Once they are on the cookie sheet, make an imprint in each cookie with your thumb and add a bit more sugar to the center.
Bake 8-10 minutes.
