Thank you for posting this recipe. I've tried it after ordering Tennessee T-Cakes to compare.
This recipe makes a wonderful mini-muffin that is exactly the same as the original. The only difference I noticed is that the original Tennessee T-Cakes were a little softer and a little more moist that the ones I made with this recipe but that probably could be corrected by either adjusting the baking time or the temperature on my oven.
