Recipe: Pickled Frankfurters

PICKLED FRANKFURTERS
Must be made at least 3-4 days ahead.
1 lb. tiny frankfurters
1/2 cup water
1 1/2 cups vinegar, divided
1/4 cup onion, sliced thin
1/2 tsp. peppercorns
6 whole cloves
1 1/2 Tbsp. salt
1 Tbsp. sugar
2 garlic cloves
Cover frankfurters with 1/2 cup water, 1/2 cup vinegar, onion, peppercorns, whole cloves and salt. Cook slowly until tender.
Drain off liquid and pack in jars. Cover with the remaining 1 cup white vinegar, 1 Tbsp. sugar, and 2 garlic cloves. Cover jars tightly and refrigerate at least 3-4 days.
Refrigerate leftovers. Will keep for several weeks in the refrigerator.
Makes 4 dozen
