SPINACH SAUTE
1 lb fresh spinach
1 large tomato, peeled, cut in thin wedges
2 cloves garlic, crushed
2 to 3 tbsp oil
salt and pepper (to taste)
Wash spinach thoroughly and drain; set aside.
Saute tomato and garlic in salad oil in a large skillet.
Add spinach; cover and cook over low heat 15 minutes, stirring once or twice. Add salt and pepper to taste. Cook, uncovered, 5-10 minutes longer, stirring occasionally.
Makes 4 serving
