Recipe: Footloose Zucchini (shredded zucchini, layered with cheddar and baked)

FOOTLOOSE ZUCCHINI

6 medium zucchini (about 2 lb total)
1/2 lb cheddar cheese, grated
1 tsp salt
1/4 tsp ground black pepper

Pare the zucchini and grate it with the coarsest grater (or chop or slice it small).

Layer the zucchini and cheese, 3 layers each, in an 8-cup casserole dish, salting and peppering each layer until you've used up everything, ending with the cheese on top.

Bake, covered, in a 350 degree F oven for 40 minutes.

Makes 3-4 servings
