Recipe: Squash Patties (with onion and bell pepper)

SQUASH PATTIES

4 cups sliced yellow summer squash or zucchini
1 small onion, chopped
1 tbsp chopped green bell pepper
1 cup all-purpose flour
1/2 cup milk
1 egg, slightly beaten
3 tbsp vegetable oil
1 tbsp sugar
Vegetable oil (for frying)

Combine squash, onion, and green pepper in a medium saucepan; add water to cover. Cook over medium heat until tender. Drain.

Add next 5 ingredients, mixing well.

Drop by rounded tablespoonfuls into deep, hot oil. Fry until browned.

Makes 10-12 patties
