Zippy Beef Brisket
One 5-pound brisket
Salt and pepper to taste
2 onions, thinly sliced
One 5-ounce jar prepared horseradish
One 10 1/2 -ounce can beef consomm
1 cup red wine
Season meat with salt and pepper. Brown in a 350 degree F. oven for 30 minutes. Cover meat with onions. On top spread horseradish. Pour can undiluted consomm over brisket. Cook, covered, at 300 for 4-5 hours. Add remaining consomm as needed. One-half hour before serving, add the wine. Skim grease off pan juices and serve meat thinly sliced.
