Recipe: Stir-Fry Beef with Tomatoes and Peppers

STIR-FRY BEEF WITH TOMATOES AND PEPPERS

1 lb. sirloin stir-fry beef
Pinch of garlic powder
1/2 teaspoon salt
1/8 teaspoon ground black pepper
1/2 teaspoon ground ginger
1 teaspoon olive oil
1/4 cup soy sauce
1/2 teaspoon sugar
2 medium tomatoes, quartered
1 bell pepper, cut into large chunks
3/4 cup bean sprouts
1 tablespoon cornstarch
1/8 cup water
Hot cooked rice (for serving)

Combine beef with garlic, salt, pepper and ginger. Heat oil in wok or skillet; cook beef over high heat for 5 minutes or until well browned.

Add soy sauce and sugar; cook on low heat for 5 minutes.

Add tomatoes and bell pepper to meat with bean sprouts. Cook over high heat for 5 minutes.

Blend cornstarch and 1/8 cup water; add to skillet. Reduce heat and simmer until mixture thickens.

Serve over rice.
