Baked Zucchini, Eggplant, and Tomatoes
1 medium thinly sliced eggplant
1 medium thinly sliced zucchini
2 tomatoes; sliced thinly
1 medium thinly sliced onion
1/4 cup chicken stock
1 tbsp soy sauce
3 cloves garlic; minced
1/4 tsp dried thyme
Arrange vegetables in layers in a sprayed baking dish.
Combine remaining ingredients and pour over vegetables.
Cover and bake at 400 degrees F for 30 minutes.
