Recipe: Golden Cinnamon Applesauce

Golden Cinnamon Applesauce
Makes: 8

9 Golden Delicious apples, chopped
3 tbsp lemon juice
3 tbsp brown sugar or 1 1/2 tablespoons honey
2 tbsp water
1/2 tsp ground cinnamon

In a 4-quart saucepan, combine the apples, lemon juice, sugar or honey, water and cinnamon.
Cover and place over a medium-low heat.
Cook, stirring frequently, for 20 to 30 minutes, or until the apples are very tender.

Transfer to a large bowl, coarsely mash, cover, and chill. Serve with Sweet Potato Pancakes or spread on toast, muffins or rice cakes.
