Recipe: Homemade Sicilian Style Turkey Sausage

Sicilian Style Turkey Sausage

Yield: 5 pounds

5 Feet small hog or sheep casings
5 lb Turkey meat (15% fat)
2 tsp Whole fennel seed
2 tsp Crushed fennel seed
2 tsp Crushed red pepper-optional
2 tsp Salt, or to taste
2 tsp Black pepper
1 tsp Garlic powder OR 4 cloves finely minced garlic

Using fine disk, grind turkey, mix with remaining ingredients and grind again.

Stuff into casings and twist off into 3-inch links.

Cook in vegetable oil until browned and cooked through.
