Oat Bran Muffins
Something for your afternoon tea or breakfast. They taste good, are easy to make and are good for you.
2 cups of oat bran
1/2 cup of flour
2 Tbls brown sugar
1 teaspoon baking powder
2 eggs
2 Tbls olive oil
1/2 cup of skim milk
1/2 cup of sunflower seeds
1/2 cup of chopped dried apricots
Run the oat bran in you food processor for some minutes - add the other dry ingredients. Add wet ingredients, stir. Add sunflower seeds and apricots, stir by hand.
Mixture should be fairly thick - but I don't know how big eggs you have, or how dry your oatbran and flour is, so you may add a little more milk or a little more flour. Bake in a medium hot oven (360 - 390 degrees) for about 17 minutes.
These may be less sweet than you like them, in that case add more sugar. I also make them without apricots but with an addition of sesame seeds.
