Fudge Cake with Orange Frosting
3 squares unsweetened chocolate, cut up
1 1/2 cups milk
1/3 cup brown sugar
2 1/4 cups cake flour or sifted plain all-purpose
1 teaspoon baking soda
1/2 teaspoon salt
2/3 cup butter or margarine
1 cup sugar
3 eggs, beaten
1 teaspoon vanilla
Orange Buttercream Frosting (recipe follows)
Preheat oven to 350 degrees F.
Grease and lightly flour 3 8' round cake pans.
Melt chocolate in milk in the top of a double boiler, whisking until blended. Stir in brown sugar until smooth. Remove from heat and cool.
Sift together flour, baking soda, and salt.
Cream together butter and sugar until fluffy. Beat in eggs and vanilla.
Beat in dry ingredients and chocolate mixture alternately, beginning and ending with the dry ingredients. Beat until smooth.
Pour into prepared pans and bake at 350 degrees F. until a toothpick inserted in the middle comes out clean, 25 to 30 minutes.
Cool in pans for 15 minutes, then remove to a rack and allow to cool completely before frosting.
Orange Buttercream Frosting
1/2 cup butter
4 cups powdered sugar
grated zest of one orange
4 tablespoons orange juice
Cream together butter and sugar. Beat in orange zest.
Beat in orange juice one tablespoon at a time until frosting is fluffy and spreadable.
