Recipe: Triple Corn Fritters

Triple Corn Fritters

1 1/3 cups all-purpose flour
1/2 cup yellow cornmeal
1 tablespoon baking powder
2 teaspoons sugar (* see note)
1 teaspoon salt
2 eggs, beaten
1/3 cup milk
2 tablespoons oil
12 ounces corn, cream-style
12 ounces corn, whole kernel, canned, drained
oil for frying

Lightly spoon flour into measuring cup; level off. In medium bowl, combine flour, cornmeal, baking powder, sugar and salt. In large bowl, combine eggs, milk, oil and cream style corn. Blend in dry ingredients, stirring just until moistened. Stir in whole kernel corn. In deep fat fryer or heavy saucepan drop batter by tablespoons and fry in 2-3 inches hot fat (365 F.) for 2-3 minutes on each side or until golden brown.

Drain on paper towel. Serve warm. Makes 28 fritters.

*If you like sweeter corn fritters, you may add 1 to 2 more teaspoons of sugar.
