Lumber Baron Potatoes

Makes 8 servings
3 large peeled long white potatoes -- sliced 1/4"
2 cups onions -- chopped
3 tablespoons butter or margarine
1 tablespoon dried parsley -- crushed
1/2 teaspoon garlic salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme -- crushed
1/2 teaspoon dried sage -- crushed
1/4 teaspoon dried rosemary -- crushed
16 ounces bulk pork sausage -- to 18
2 cups Swiss cheese -- 8 oz shredded
or
8 ounces Swiss cheese slices
In a large saucepan, cook the potato slices in lightly salted boiling water for 12 to 15 minutes or till just tender. Drain off the water.
In a heavy, large skillet, cook potatoes and onions in butter or margarine over medium-high heat till potatoes are lightly browned, turning often. Add parsley, garlic salt, pepper, thyme, sage and rosemary; toss lightly.
Spoon mixture into an ungreased 13x9x2-inch (3-quart rectangular) baking dish.
In the same skillet, cook sausage over medium-low heat till no pink remains, breaking meat into small pieces. Drain off fat.
Spread the cooked sausage over potato mixture. Sprinkle evenly with shredded Swiss cheese or arrange cheese slices on top.
Bake in a 350F oven for 20 to 25 minutes or till heated through. Serve with eggs, if you like.
