Blender Potato Pancakes
1/4 cup flour
2 eggs
l thin slice onion
1 tsp. salt
2 tab. parsley clusters
3 cups diced raw potatoes (2 large Idaho potatoes)
Into blender container put all ingredients EXCEPT potatoes. Cover and blend for 20 seconds. With motor on, remove cover and add potatoes As soon as last piece of potato is added press OFF. Pour batter onto a hot greased griddle, and cook on both sides until brown.
