Praline Louisiana Yams
Makes 6 servings
1/2 cup of granulated brown sugar
1/2cup heavy cream
2 tbsp of melted butter or margarine
1/2 cup if chopped pecans
1/4 tsp salt
1/4 tsp of cinnamon
1/2tsp nutmeg
3-1lb cans of yams heated and drained or 6 medium yams cooked peeled and quartered
Place sugar, cream and butter pecans salt cinnamon and nutmeg in thick 1 quart saucepan. Stir over low hit for 7 min or until ingredients are blended and form heavy syrup. Pour over hot yams in serving dish.
