PEANUT BRITTLE DELUXE
Makes about 2 pounds
2 cups sugar
1 cup beehive corn syrup
1/4 cup water
1 1/2 cup or more salted peanuts
2 tbsp butter
1 tsp vanilla
2 tsp baking soda
In 3 quart saucepan combine sugar, corn syrup and water. Mix well.
Cook over medium heat stirring often to prevent scorching.
Add peanuts and butter.
Cook to 295 (hard crack stage), stirring constantly.
Remove from heat.
Add vanilla and soda stirring well.
Working quickly pour into large, well greased cookie sheet.
Spread with a spatula as thin as possible.
When cold, break into pieces.
