Recipe: Pistachio Pudding Surprise (using pineapple and marshmallows, freeze ahead)

2 cups (1 pint) sour cream
1 (4-serving size) pkg. pistachio instant pudding
1 cup flaked coconut
1 (8 1/4 or 20 oz.) can crushed pineapple
1/2 to 1 cup miniature marshmallows (optional)
Combine sour cream and pudding mix. Add coconut, pineapple and marshmallows and stir until blended.
Spoon into an (8x4- or 9x5-inch) loaf pan, or a jello mold can be used.
Freeze until firm, at least 3 hours or may be chilled and served just like pudding.
If frozen, dip pan in warm water and unmold onto serving plate.
