Recipe: Chicken Oregano (with tomatoes and mushrooms, Wesson, 1960's)

1 frying chicken, cut up
1/4 cup Wesson oil
1 onion, chopped
1 clove garlic, minced
2 fresh tomatoes, diced
1 (4 oz.) can mushrooms, undrained
1 tsp. salt
1/4 tsp. ground black pepper
1 tbsp. oregano or dill weed
Hot cooked rice (optional, for serving)
Coat chicken with hot oil in heavy skillet. Brown over medium heat.
Add onion and garlic, cook 3 minutes.
Add remaining ingredients, except rice. Cover, cook slowly 30 minutes.
Serve with rice, if desired.
Makes 4-6 servings
