Recipe(tried): Eva's Little Pickled Corn

Eva's Little Pickled Corn

Boil as much corn (3 to 5 inches long) as you are able to find in salt water for 15 to 20 minutes; drain and put into sterilized jars & cover with the following hot syrup.

2 cups white wine vinegar
1 cup water
2 tsp. salt
2 cups sugar
1 tbsp. celery seed & mixed pickling spices tied in a bag

Bring all ingredients to a boil, fish out the spice bag & pour the syrup over the corn in the jars. To make the corn look more yellow, put a pinch of tumeric on top of each jar before you seal it, then give it a shake.

Have not tried this recipe yet as tiny corn can be hard to get. This is a favorite in the area I live.
