Recipe(tried): Microwave Corn Pudding (using cream style corn)

This is a very good 'last minute' side dish:

MICROWAVE CORN PUDDING

1 egg
1 tablespoon sugar
1 heaping tablespoon cornstarch
Salt and pepper, to taste
1 (1 pound) can cream style corn
1 cup milk

Beat egg, sugar, cornstarch, salt and pepper together.

Stir in corn and milk.

Pour in deep microwave-safe glass baking dish. Cook in microwave, uncovered, on HIGH for 5 minutes.

Stir well. Cook 5 minutes more or until almost set in middle. Let stand, covered, about 3 minutes.

Makes 2-4 servings
