Spicy Black Bean & Corn Salsa
2 cups black beans
16 ounces whole kernel corn -- drained
1/2 cup chopped fresh cilantro
6 tablespoons fresh lime juice
6 tablespoons vegetable oil
1/4 cup minced red onion
1/4 cup minced green onion
1 1/2 teaspoons ground cumin
1/2 cup tomatoes -- chop
Mix first 8 ingredients in large bowl. Season to taste with salt and pepper. Cover and refrigerate until cold. (Can be prepared 1 day ahead; keep refrigerated.) Mix tomatoes into salsa and serve.
