CORN PUDDING
2 cups fresh corn cut from cob
2 eggs, slightly beaten
3/4 cup milk
2 T. sugar
2 T. diced onion
2 T. butter or margarine, melted
1 tsp. salt
1/8 tsp. pepper
Combine all ingredients; mix well. Pour into a lightly greased 1-quart baking dish. Bake, uncovered, at 350 degress for 30 minutes for 30 minutes or until firm. Yield: 4 to 6 servings.
