Poblano-Corn Soup

6-8 green chiles, roasted, peeled, and chopped
8 large potatoes, mashed
pat butter
1 large cream cheese, may be low-fat
1 qt. milk (or water and 2 cans skimmed evaporated milk)
1/4+ c. lemon juice
S & P
2 cans white corn
Heat. Blend, if desired.

Simplified version:
Substitute 3 cans chopped chiles and use frozen mashed potatoes.

Optional additions we've discovered:
creamed corn, especially fresh
cabbage, finely chopped
onions, chopped
