FRESH PEACH PIE
5-6 medium-size rip peaches (about 2 1/4 pounds)
1 cup sugar
3 T. cornstarch
1/4 tsp. ground nutmeg
1 T. fresh lemon juice
1 baked 9-inch pie shell
Whipped cream (optional)
Peel peaches, and remove and discard pits. Mash 2 1/2 peaches. Combine mashed peaches, sugar, cornstarch, and nutmeg in a large saucepan. Bring to a boil;
reduce heat, and simmer, stirring constantly, until thickened. Remove from heat, and stir in lemon juice. Cover and let cool to room temperature. Slice
remaining peaches, and add to cooled peach mixture in pan. Stirring gently. Spoon mixture into prepared pie shell; cover and chill for at least 3 hours. Serve
with whipped cream, if desired. Yield: one 9-inch pie.
