Grilled Teriyaki Pork Chops w/Summery Peach Salsa

Serving Size : 4

4 (6oz) center cut pork chops -- (about 3/4" thick)
1/4 cup low-sodium soy sauce
3 tablespoons minced shallots
2 tablespoons dry white wine
2 tablespoons fresh lime juice
1 tablespoon minced, peeled fresh ginger
1 1/2 teaspoons brown sugar
2 cloves garlic -- minced
cooking spray

Summery Peach Salsa
1 cup diced peaches
1/2 cup diced plum tomato
1/4 cup minced shallot
3 tablespoons orange juice
2 tablespoons minced fresh parsley
1 teaspoon grated lime find
2 tablespoons fresh lime juice
1 1/2 tablespoons chopped, seeded jalapeno pepper
1 tablespoon minced fresh mint
1 tablespoon honey
1 teaspoon minced, peeled fresh ginger

For pork chops: Trim fat from pork. Combine pork and next 7 ingred. in a large zip-lock plastic bag. Seal and marinate in refrigerator for 4 hours, turning bag occasionally. Remove pork from bag, reserving marinade. Prepare grill. Place pork on a grill rack coated with cooking spray; cook 7 min. on each side or until done, basting frequently with reserved marinade. Serve with Summery Salsa. Serving size: 1 chop and 1/2 cup salsa.
