Peach Custard Flan

Pastry:
2 c flour 3/4 c butter
1 T sugar 1 egg yolk
4 T water pinch salt

Cut butter into flour, sugar and salt until crumbly. Whisk yolk and water and gently work into flour by hand. Rool out 3/4 of dough to line 9 in. pie. Use remainder for small leaves to trim edges.

Filling:
4 peaches 4 eggs
1 c whipping cream 1/4 c sugar
1/2 t vanilla

Lightly beat eggs, cream, sugar and vanilla together. Peel and slices peaches. Fan peaches decoratively on bottom of the shell. Should make 2 layers. Pour egg mixture over, lay leaves around edge of pie, and bake at 425 for 10 min. Reduce heat to 325 and bake another 25 min. Let Cool.

Glaze:
1/4 c apricot jam 2 T water

Heat jam and water, then brush over pie. Refirgerate until set, 1 hr.
