Recipe: Tomatoes in Herb Vinaigrette

TOMATOES IN HERB VINAIGRETTE
Serves 4

4 sliced tomatoes
1/4 lb Manchego Cheese or Mozzarella, thinly sliced
2 tbsp Balsamic vinegar
2 tbsp lime juice
1/2 onion chopped
3 tbsp fresh sweet basil chopped
Salt and pepper to taste
6 tbsp extra virgin olive oil

In a serving plate, place a tomato slice and a cheese slice, repeating until they end. Mix the vinegar, lime juice, onion, sweet basil, olive oil and salt and pepper. Sprinkle over the tomatoes and cheese.
