Caribbean Chicken
Serves 4
Delicious drumsticks in a Caribbean rum and orange coating.
8 chicken drumsticks
2 oz. (50g) butter, melted
2 tbsp. (30ml) fresh orange
4 tbsp. (60ml) dark brown soft sugar
1 tablespoon rum
quarter teaspoon (1.25ml) ground cinnamon
quarter teaspoon (1.25ml) ground nutmeg
Pre-heat oven to 375F, Gas Mark 5, 190C. Make slits in the skin of the chicken drumsticks.
Place the drumsticks on a roasting tin and brush with the melted butter. Put the drumsticks in the pre-heated oven for 20 minutes. Mix together the orange juice, brown sugar rum and spices.
Pour the mixture over the drumsticks and return to the oven for 15 minutes, basting drumsticks with the cooking juices every 5 minutes or until chicken turn a golden brown.
