MAPLE CHICKEN
4 boneless chicken breasts
1/3 cup flour
1/2 cup maple syrup
1/4 cup vegetable oil
2 cloves garlic, minced
2 tbsp sherry or other wine
2 tbsp. soy sauce
2 tbsp vinegar
2 tsp chopped fresh ginger
1/2 tsp pepper
1/4 tsp paprika
About 1 tbsp cornstarch to thicken slightly
Preheat oven to 350 degrees F.
Coat chicken breasts with flour and brown in pan with vegetables oil or spray for about 5 minutes. Arrange in 9 inch square pan.
Whisk balance of ingredients in small bowl. Pour over chicken.
Cover and bake 25 minutes. Uncover and bake another 20 to 25 minutes. Occasionally, spoon sauce over chicken.
Serve over brown rice.
Delicious!!
