Hot Spinach Dip
2 (4") chiles, seeded & chopped
1 jalapeno pepper, seeded & chopped (wear rubber gloves)
1 small onion, chopped
2 tablespoons oil
2 tomatoes, peeled, seeded & chopped
1 (10 oz.) pkg. chopped, frozen spinach, thawed & squeezed dry
1 tbsp. red wine vinegar
8 oz. cream cheese, softened
2 cup grated Monterey Jack cheese
1 cup half & half
Salt & pepper
Preheat oven to 400F degrees.
Cook peppers and onions in the oil just to soften (do not brown). Add tomatoes and heat through. Pour mixture into a mixing bowl and stir in the remaining ingredients. Spread in a lightly oiled, shallow baking dish. Bake at 400F degrees for 25-35 minutes or until bubbly and top is browned. Serve with tortilla chips.
