Gladys, How ripe should the mangoes be?

Hi Gladys,

As you probably know, we grow a lot of mangoes in Hawaii, too, and I'm always looking for new ways to use them.

How ripe should they be for this recipe? Still green? Hard but ripe? Fully ripe?
