Lemon Delicacy
Serves 6

1 c. sugar
2 Tbls. flour
pinch of salt
2 egg yolks, beaten
1 c. milk
grated rind & juice of 1 lemon
2 Tbls. butter, melted
2 egg whites, beaten stiff

Sift together sugar, flour & salt. Stir in egg yolks. Beat in milk, lemon rind & juice, & melted butter. Fold in egg whites. Pour into greased 8"pie plate or 1 quart baking dish.

Set pie plate or baking dish in pan of hot water(about halfway up sides of pie plate)& bake at 350 degrees for 30-40 minutes. Let cool. Refigerate. Serve cold.
