Recipe: Soft Molasses Cookies (using coffee)

SOFT MOLASSES COOKIES

3/4 cup shortening
1 cup sugar
2 eggs, well beaten
1 cup light molasses
4 cups sifted flour
2 tsp. ground cinnamon
1 tsp. ground ginger
1 tsp. baking soda
1 tsp. salt
3/4 cup strong cold coffee

Preheat oven to 350 degrees F. Grease cookie sheets.

Cream shortening and sugar. Add eggs and molasses. Beat well; set aside.

Sift dry ingredients together. Add to creamed mixture alternately with coffee. Drop from teaspoon on prepared cookie sheet.

Bake at 350 degrees F for 15 minutes.
