Marinated Mushrooms and Olives

---Marinade---
1 cup extra virgin olive oil
1 cup white wine vinegar
4 cloves garlic -- crushed
2 teaspoons dried oregano
1 1/2 teaspoons salt
1 teaspoon red pepper flakes
---Ingredients---
3 pounds small white mushrooms
1 small jar pimiento-stuffed green olives -- drained
1 jar good quality ripe olives -- drained
In a jar with a tight fitting lid, combine marinade ingredients well; set aside. Wash and drain mushrooms; cut off stem end, leaving 1/2 of stem. In a 2 qt sauce pan heat water to boiling, add mushrooms, reduce heat and simmer for 5 minutes. Drain and cool.
Place cooled mushrooms and drained ripe and green olives in a bowl. Pour marinade over and toss until well coated. Cover and refrigerate up to 1 week, stirring occasionally. To serve, drain well and spoon into serving bowl.
NOTES : A nice addition is feta cheese added to the mushrooms and olives before pouring on the marinade. This also can be made as marinated mushrooms only, by halving the marinade and following the instructions for preparing the mushrooms.
