Senate Cheese Straws
Makes 5 to 6 dozen straws
Served at the Inaugural luncheon for Ronald Reagan, January 1981, according to June Drummond, who shared it in The Heritage Presbyterian Potpourri of Palate-pleasing Provender
1 lb Sharp cheddar cheese
1 3/4 cups Flour
1 tsp Salt
1/4 lb Butter
1/4 tsp Cayenne
Finely grate the cheese; combine with other ingredients and beat until creamy, adding a few drops of water if necessary to form a firm dough. Divide dough in half. Roll each section 1/4 inch think. Cut into strips about 6"x3/8". Twist. Place on ungreased cookie sheet; chill in freezer 15 minutes. or longer to maintain shape. Bake at 350F for 10 to 12 minutes.
