Recipe: Cheese Puff Ring
Breakfast and BrunchCHEESE PUFF RING
"This Popover-type bread is good for lunch when served with a salad."
1 cup milk
4 tbsp butter
1/2 tsp salt
1 dash pepper
1 cup flour
4 eggs
1 cup Swiss cheese; shredded
Preheat oven to 375 degrees.
In a large saucepan, heat first 4 ingredients. Bring to a full boil and add flour all at once, stirring over medium heat about 2 minutes or until mixture leaves sides of pan and forms a ball.
Remove from heat and beat in each of the eggs by hand until mixture is smooth and well blended. Beat in half the cheese.
Using an ice cream scoop or large spoon, make 8 equal-sized mounds of dough in a circle on a greased baking sheet, using 3/4 of the dough. Each ball should just touch the next one. With remaining dough, place a small mound of dough on top of each large mound. Sprinkle the remaining cheese over all.
Bake at 375 degrees for about 55 minutes or until puffs are lightly browned and crisp. Serve Hot.
Puffs may be wrapped in foil, frozen and reheated in the foil.
Yield: 8 servings
